Nanotechnology is assuming a revolution in many fields of science and technology. No stranger to these movements, the food industry is the protagonist of many innovations involving the use of nanotechnology and nanostructured materials. Given its novelty, the use of these technologies causes a strong insecurity due to the lack of conclusive studies on safety and a proper legislation. This summer school covers all the topics related to the use of nanotecnology in the food industry, from the most novel applications (formulation of new foods, encapsulation of bioactives, development of antimicrobials, development of nanoparticles with industrial applications, nano packaging) to the evaluation of risk, metrology, toxicity evaluation and legislation.
